摘要本实验主要采用DPPH和ABTS测定柏木油香精及其单组分的抗氧化性能,并对其抗氧化性能较好的单组分的协同抗氧化性能进行研究。结果表明,对DPPH清除能力为1%柏木油香精样品>1。9mmol/LBHT>1%柠檬醛>1%柏木油>1%松节油≈1%芳樟醇>>>1%桉叶素;对ABTS清除能力为1%柏木油香精样品>1。9mmol/LBHT溶液>1%柏木油>1%柠檬醛>1%芳樟醇≈1%松节油>1%桉叶素;协同抗氧化能力研究表明柏木油、柠檬醛和芳樟醇三组分之间均有一定的协同抗氧化作用,其中柏木油和芳樟醇两者协同抗氧化能力最好。柏木油和柠檬醛对协同抗氧化的贡献较大。74676

Study on the antioxidant activity of a collaborative cedarwood oil flavor antioxidant performance and composition
Abstract
