摘要:本论文研究从紫甘蓝中提取色素,主要对紫甘蓝色素的提取工艺做系统的研究,利用不同的提取方法:传统水浴法、超声波辅助提取法以及微波萃取法,通过单因素试验和正交试验确定紫甘蓝色素的最佳提取工艺条件,并对其稳定性做初步研究。得到不同方法的优化的提取条件:传统水浴法的最佳提取条件为以25%的乙醇作为溶剂、pH2、20:1的液固比、40℃水浴浸提5小时;超声波辅助提取法的最佳提取条件为以25%的乙醇作为溶剂、pH2、超声波功率40W、60℃提取60min;微波萃取法最佳提取条件为以25%的乙醇作为溶剂、pH2、微波功率540W萃取2min。后两种方法较传统水浴法时间更短,提取效率较高。19893 毕业论文关键字: 紫甘蓝;色素;提取
Study on Extraction Technology of Purple Cabbage Pigment
Abstract: This design study was to extract pigment from purple cabbage, mainly to do a system study on purple cabbage pigment extraction, using different extraction methods: traditional water bath method, ultrasonic assisted extraction and microwave extraction by single factor and orthogonal experiments purple cabbage pigment to determine the best extraction conditions, and do a preliminary study of its stability. Got the best extractions of different method: optimal conditions for the traditional water bath of 25% ethanol as a solvent, pH2, 20:1 liquid to solid ratio, 40 ℃ water extraction five hours; ultrasonic assisted extraction method the optimum extraction conditions were 25% ethanol as a solvent, pH2, ultrasonic power 40W, 60 ℃ extraction 60min; microwave extraction optimum extraction conditions were 25% ethanol as a solvent, pH2, microwave power 540W extraction 2min. The latter two methods compared to the traditional water bath have the higher extraction efficiency.
