摘要:本实验利用有机溶剂萃取法提取玉米成分中的玉米黄色素及其稳定性研究,通过索氏抽提法对比不同有机溶剂提取玉米黄色素的效果;然后通过单因素实验和正交实验验证并确定最佳提取工艺,最后研究外界不同条件对色素的稳定性的影响,包括玉米黄色素的耐热性,耐光性以及氧化剂和还原剂对玉米黄色素的稳定性的影响,实验结果显示:玉米蛋白粉中黄色素含量最多,因此应当选用玉米蛋白粉进行提取工艺的研究,最佳提取溶剂为95%乙醇,最大波长为450nm,最佳料液比为1:10,最适pH为4,最佳提取时间为3小时,最适温度为60℃。对玉米黄色素的稳定研究表明:玉米黄色素的耐光性不佳,尤其日光直射对玉米黄色素有明显的破坏作用;玉米黄色素的耐热性较强,虽然随着温度升高可能会导致玉米黄色素的降解,说明温度过高在一定的程度上会破坏玉米黄色素的稳定性,但实验发现玉米黄色素在温度的影响下降解速度比较缓慢;pH值对玉米黄色素的稳定性影响测定可以得出玉米黄色素的提取应该在酸性或中性条件下进行;氧化剂对黄色素稳定性影响较小,但应避免与强氧化剂接触,还原剂对玉米黄色素的稳定性影响较大。61949

Abstract:The extraction of corn component of maize yellow pigment and its stability using organic solvent extraction method, Soxhlet extraction method through the comparison of different organic solvent extraction of maize yellow pigment; then through single factor experiment and orthogonal experiment and the optimum extraction process, influence the stability of different conditions on the outside end of pigment, heat resistance including corn yellow pigment, light fastness and oxidizing and reducing agent on the stability of maize yellow pigment. The experimental results showed that the corn flour yellow pigment content most, so it should be selected to study the extraction process of jade Rice noodles, the best extraction solvent is 95% ethanol, the maximum wavelength is 450nm, the optimal solid-liquid ratio was 1:10 and the optimal pH is 4, the optimal extraction time is 3 hours, the optimum temperature is 60 DEG C. Study on stability of maize yellow pigment showed that maize yellow pigment poor light fastness, especially direct sunlight has obvious destructive effect on maize yellow; maize yellow pigment with strong heat resistance, although with the increase of temperature may lead to degradation of maize yellow pigment, indicating high temperature stability in a certain extent, will destroy the maize yellow pigment, but found that maize yellow pigment in the temperature under the influence of the degradation rate is relatively slow; the pH value of maize yellow pigment can be obtained to determine the stability effect of extraction of maize yellow pigment should be carried out in acidic or neutral conditions; oxidant on the stability of yellow pigment has little effect, but should avoid contact with strong oxidizing agents, reducing the agent has much influence on the stability of maize yellow pigment.
