摘要:本试验旨在研究不同日粮淀粉类型对育肥猪生长性能和肉品质的影响,选取体重约68kg健康的育肥猪90头,随机分为3组,每组分5个重复,每个重复6头猪。试验日粮参考75-100kg育肥猪NRC(2012)的标准配制,采用纯的蜡质玉米淀粉(WMS),非蜡质玉米淀粉(NMS)和豌豆淀粉(PS)作为淀粉来源配合三种试验日粮,测得日粮中的直链淀粉/支链淀粉比例分别为0.07、0.19、0.28。饲养28天后,禁饲12h称重、屠宰取肌肉样,测定生产性能和肉品质。结果显示:育肥猪采食PS日粮显著提高了平均日增重(ADG),以及显著降低料重比相比于采食WMS日粮(P<0.05),然而三组不同日粮对育肥猪平均日采食量没有显著差异(P>0.05)。在肉品质方面,尽管不同日粮处理对背最长肌pH24h值、肉色(L*,a*,b*)和剪切力等指标均无影响(P>0.05),但相比于WMS日粮和NMS日粮,PS日粮显著提高背最长肌pH45min值(P<0.05),并显著降低了滴水损失(P<0.05),;且PS日粮组背最长肌蒸煮损失也显著低于WMS日粮组(P<0.05)。结论:采食PS日粮的育肥猪生长性能和肉品质均优于采食WMS日粮的育肥猪。26235 毕业论文关键词:淀粉类型;育肥猪;生长性能;肉品质
Effect of dietary starch types on growth performance and meat quality of finishing pigs

Abstract:The purpose of this experiment was to determine the effect of dietary starchtypes on growth performance and meat quality of finishing pigs. Ninety barrow pigs with an average initial body weight of 68kg were selected and randomly pided into three dietary treatments with five pens per treatment and six pigs per pen..The trail diets were formulated to meet the nutrient requirements for 75-100kg pigs (NRC2012).Pure waxy maize starch (WMS), nonwaxy maize starch (NMS) and pea starch (PS) served as the starch source,andthe dietary amylose to amylopectin ratio were 0.07、0.19 and0.28, respectively. At the end of the 28 days feeding, after a 12h fast, pigs were weighed,slaughtered andmuscle samples were collected to measure the growth performance and meat quality. The results showed that pigs fed with PS diet significantly increased average daily gain (ADG) and reduce the F/G (P<0.05)compared withWMSdiet(P<0.05). However,there was no significant difference in average daily feed intake(ADFI)among the three groups(P>0.05). In terms of meat quality, compared to the WMS diet and NMS diet,PS diet significantly increased pH45min value(P<0.05) and decreased drip loss(P<0.05) inthe longissimus muscle. Cooking loss in M. longissimus lumborumof PS diet was significantly lower than the WMS diet (P<0.05). However, different diets had no effect on pH24h. (L*, a*,b*) and shear force(P>0.05).Conclusion: compared with the WMS diet, the finishing pigs fed with PS diet could improvedgrowth performance andmeat quality.
