摘要:红豆还含有多种微量元素和无机盐,如锰、钙、镁、锌、钾、铁、铜等。红豆的营养成分与人们熟悉的绿豆相近,有些甚至超过了绿豆。为了普及和推广红豆及其制品的创新发展,特选取在市场上比较少见的红豆芽为材料,探究其在不同浓度的纯牛奶溶液中的生长状况。用市场上售卖的高品质牛奶蒙牛特仑苏作为实验处理材料,制成4倍,20倍,100倍和500倍稀释溶液,以去离子水处理的红豆芽为对照组。通过实验表明,从生长情况来看,4倍和20倍稀释的牛奶溶液会对红豆芽的生长产生一定程度上的抑制现象,其中4倍稀释的牛奶溶液的抑制程度更高;500倍和100倍稀释的牛奶溶液处理红豆可以一定程度上促进红豆芽的生长,两者相比较,500倍的牛奶稀释溶液的促进生长作用更加明显。而从红豆芽的生长品质来看,利用牛奶稀释溶液处理过的红豆芽的含氮量和文生素C 含量均高于对照组,其中红豆芽含氮量和文生素C 含量与其对应处理的牛奶稀释溶液的浓度成正相关,在干重方面,也与牛奶稀释溶液的浓度成正相关关系。37246

Effects of Milk on the Growth and Quality of Red Bean Sprouts

Abstract: red bean also contains many trace elements and inorganic salts, such as manganese, calcium, magnesium, zinc, potassium, iron, copper and the like. Nutrition in red beans is similar to green beans, some even more than green beans. In order to popularize and promote the innovation and development of red beans and its products, choose a relatively rare red bean sprout in the market for the material, and explore its growth status in different concentrations of pure milk.  use the high-quality milk, "Mengniu Deluxe" on the market treated to work as experimental material, made 4 times, 20 times, 100 times and 500 times diluted in some degree, solution while red bean sprouts which has been treated by deionized water work as the control group.
Experiments show that, from the growth point of view, 4-fold and 20-fold diluted solution exhibited a repression effect on the growth of red bean sprouts, and 4-ford one is far-gone. 500-ford  and 100 fold diluted solution of milk could both promote the growth of red bean sprouts, and the promotion by 500-fold diluted solution of milk was much obvious. In view of the growth quality of red bean sprout, the nitrogen content and vitamin C content in the sprout treated by diluted milk were higher than control group. We also found a positive correlation between the nitrogen content, vitamin C content and the concentration of the diluted solution of milk. In dry weight, too.
