摘要保加利亚乳杆菌是一种市面上常见的益生菌,不仅具有预防和治疗一些胃肠道的疾病,还具有促进消化与吸收的作用,增强人体的免疫功能,预防癌症等的作用。但保加利亚乳杆菌对不良环境较敏感,进入人体肠道后其稳定性都大大下降。因此,对保加利亚乳杆菌活性保持的研究对益生菌发挥益生作用极为重要。为此,本课题分别利用海藻酸钠和三种不同的蛋白(红豆蛋白、绿豆蛋白和大豆蛋白),分别包埋保加利亚乳杆菌,研究其在模拟胃液、模拟胆盐中的活性,在模拟肠液的释放情况及储藏稳定性。研究结果表明:三种微胶囊对保加利亚乳杆菌都有保护作用,其中红豆蛋白-海藻酸钠微胶囊对益生菌的保护作用最好,大豆蛋白-海藻酸钠微胶囊在模拟肠液中释放率最快。46666

Abstract Lactobacillus bulgaricus as a common of probiotics on the market has the effect of the prevention and treatment of gastrointestinal diseases and can promote the role of digestion and absorption. Also, it has the effect, such as strengthening the body's immune function, preventing cancer, etc. But Lactobacillus bulgaricus is sensitive to the bad environment. And when it enters intestinal tract, both the number of living bacterium and stability are greatly reduced. So studying of keeping the stability and beneficial function of Lactobacillus bulgaricus is very important. In this study, three different microcapsules containing Lactobacillus bulgaricus were prepared using alginate and red bean protein, mung bean protein, soy protein, respectively. Their characteristics, including the viable numbers in simulated gastric fluid and bile salt solution, the release percent in simulated intestinal fluids and the stability of store, were studied. The results showed that three types of microcapsules have protective effect for Lactobacillus bulgaricus, especially the red bean protein-alginate microcapsule. However, the soy protein-alginate microcapsule’s release percent is higher in simulated intestinal fluids.
