摘要:燕麦是我国优质的谷物杂粮资源中比较突出的一种,它在所有的谷物中具有极高的营养价值和保健功能[1]。燕麦中不仅富含有蛋白质、脂肪酸、矿物质以及维生素,也存在大量次级代谢物。其中β-葡聚糖具有抗氧化[2]、抗癌、提高免疫力等特殊功效,因而在医学、食品以及化妆品行业有着巨大的开发价值。这次研究的目的在于探索一条能够高效生产出高提取率活性产物β-葡聚糖的提取方法,为我国未来开发及利用燕麦资源提供理论和实验依据。本次实验通过采用超声提取的方法,使用刚果红分光光度法测得在脱脂时间50 min、料液比1:17、pH为11、超声波提取温度为80 ℃、超声波提取时间为72 min的条件下可以获得较高提取率的β-葡聚糖。β-葡聚糖对DPPH的清除能力随着浓度的增大而增大。71090

Research on extraction separation and activity of oat
Abstract:As one of China's high quality miscellaneous grains resources, oats have a extremely high nutritional value and health function in many areas. Oats are not only rich in protein, fatty acids, minerals and vitamins, but also have a large number of secondary metabolites. In which β-glucan is provided with anti-oxidation, anti-cancer, improving immunity and other special effects, and thus β-glucan has great development value in the area of medical, food service and cosmetics industry. The purpose of this research tends to explore a efficient way to active high purity product β-glucan and extraction process and provides theoretical and experimental basis for present China's development and utilization of oat resources.In this experiment, the results showed that the appropriate conditions to abtain high purity β-glucan from oat were: the defatting time should no less than 50min,the ratio of material and water could be 1: 17, the Ph should be 11, ultrasonic extraction temperature should be 80 ℃and ultrasonic extraction time should be 72min. The scavenging ability of β-glucan to DPPH increased with the growth of the concentration.
