摘要:粤菜跟粤剧一样都是我国的国粹,而且跟辛亥革命有着不解的渊源。粤菜文化服务在餐饮服务行业中有着至关重要的作用,它作为现今第三产业中很重要的一部分,已经与人类不可分离了,作为中国有名八大菜系中的粤菜,广东饮食文化服务是我大中华饮食文化中的一个亮点。饮食文化体现出的是人类的物质精神文明,体现出的是人类文化的文明发展。在现今这个飞速的发展的社会,人们的生活质量在不断地提高的同时,对于营养健康饮食的要求也有所提高,此外还要求菜系有很高的营养价值兼备美丽的外观和可口的道。吃出文化的饮食情趣,吃出饮食文化的内涵。然而我国的粤菜文化发展并非一路高歌向前大步走,虽然有着非常悠久的历史,但是现今的餐饮文化已经不再是以前的文化。本文将从几方面去研究和总结现今我国粤菜文化服务的现状以及未来的发展之路。现状不容乐观,未来还得走创新之路。在此我以粤菜和沪菜的结合创新为例来进行研究,分析粤菜文化服务的现状和发展前景,最后得出结论:创新是粤菜文化发展的方向,也是必然之路。35078 毕业论文关键词:粤菜文化服务; 饮食文化; 饮食情趣; 创新之路;
Analysis of the current development of the Guangzhou Cuisine in China
Abstract: Cantonese opera are the same as with our national essence, and with the Revolution has puzzled origins. Cantonese cultural services has a vital role in the food service industry, it is now the third industry as a very important part, has been with the human race can not be separated, and as China's famous eight cuisines of Guangdong, Guangdong food culture service is my big Chinese food culture in a bright spot. Food-food culture is reflected in the material basis of human spiritual civilization, is a sign of human cultural development. With the continuous improvement of people's living standards, dietary requirements are also getting higher and higher, people want each dish has its own cultural and historical background sources, but also has a high nutritional value both beautiful appearance and delicious taste . Eat a diet culture taste, eat food culture connotation. However, the development of Cantonese culture is not singing all the way forward stride, although with a very long history, but today's food culture is no longer before culture. This paper will summarize all aspects to study the current status of Cantonese and cultural services as well as our future development. Situation is not ideal. Future of have to walk the road of innovation. In this I combine innovation with Cantonese and Shanghai cuisine as an example to study, analyze the current situation and development of Cantonese culture of service in the modern.
