摘要黄曲霉毒素(Aflatoxin),简称 AFT。是一类由真菌产生的次级代谢产物。自然界分布 广泛,研究表明其具有强毒性、强致癌性、致畸性。黄曲霉毒素 b1(以下简称 AFB1)是 AFT 家族中毒性最强、致癌性最高的。目前在相关领域,生物法去除 AFT 已经越来越引 起人们的重视。本实验以去除 AFB1 为目的,筛选出部分食品微生物,考察其对 AFB1 的 去除效果,并初步探讨其去除的机制。方法:选择性培养基分离和纯化红曲菌与乳酸菌, 通过活菌计数得到两种菌的生长曲线,AFB1 与菌种细胞直接混合培养 48h 后,通过 AFB1 ELISA 快速检测试剂盒测定 AFB1 剩余含量。从而确定菌株对 AFB1 的去除效果。而后对 其去除机制进行初步研究。结果:从腐乳中分离得到的红曲菌对 AFB1 的去除率约为 17。2% ,从泡菜中分离得到的乳酸菌对 AFB1 的去除率约为 25。5% 。初步去除机制研究 得出结论:红曲菌的去除 AFB1 机制尚不明确,泡菜中发现的乳酸菌对 AFB1 的去除可能 是细胞吸附作用引起的。73305

Title Study on the Removal of Aflatoxin b1 by Microorganisms
AbstractAflatoxins(AFT),are a class of secondary metabolites produced by fungi。 which have very strong toxicity, carcinogenicity, teratogenicity。 and they are widely distributed in nature。 Aflatoxin b1 (AFB1) is the most strong toxicity and carcinogenicity compared with other aflatoxins。 At present, more and more attention has been paid on biological degradation method in the related fields。 In this study, we selected some microorganisms from food to investigate the effect of AFB1 removal and the mechanism of its removal。 [Methods] Used selective culture medium to isolate and purify Monascus purpureus and Lactobacillus, get the bacteria concentration—absorbance standard curve through viable count method。 to determine the effect of microorganisms on the removal of AFB1,mixed AFB1 directly with cells of microorganisms for 48h ,and then using AFB1 ELISA kit to detect remaining AFB1 content。 after that the removal mechanism has been studied preliminary。[Results] The removal rate of AFB1 by monascus purpureus selected from red fermented bean curd is about 17。2%, and the removal rate of AFB1 by lactobacillus selected from pickles is about 25。5%。 Preliminary study found that The removal mechanism of monascus purpureus is not definite。 the AFB1 removal mechanism of lactobacillus may be caused by the adsorption of bacteria。
