摘要:本文以胡萝卜粉为原料,主要研究了微波处理提取、纤维素酶提取、溶剂提取这三种提取方法,通过单因素试验和正交试验,确定了这三种提取方法的最佳工艺条件,并且对这三种提取方法进行了比较。(1)用溶剂提取法提取天然胡萝卜素,在提取剂为无水乙醇,浸提温度为30℃,浸提时间为120min,浸提3次,料液比为1:20的实验条件下,天然胡萝卜素的OD值最大为0.551。(2)用微波处理提取法提取天然胡萝卜素,在提取剂为无水乙醇,辐射功率为640W,浸提时间为30min,料液比为1:10,浸提3次,天然胡萝卜素的OD值最大为0.638。(3)用纤维素酶法提取天然胡萝卜素,在提取剂为无水乙醇,酶解温度为50℃,pH值为4.0,酶用量为0.3%,酶解时间为120min,天然胡萝卜素的OD值最大为0.672。43495

Study on the extraction and stability of β carotene from carrot
Abstract: The carrot dry power as material is used in the test, mostly researched the extraction method of solvent, microwave and enzyme. The optimal parameters of these three extraction methods was identified bu single factor and orthogonal experiment, at the same time, these three methods were compared.(1) solvent extraction method was used to extract natural carotene, the extracting agent of anhydrous ethanol, leaching temperature of 30 ℃, the extraction time was 120 min, leaching 3 times, and solid-liquid ratio of 1:20 of experimental conditions, the natural carotene OD value of 0.551. (2) treated with microwave extraction to extract the natural carotene, the extracting agent of anhydrous ethanol, radiation power is 640 w, the leaching time for 30 min, and solid-liquid ratio of 1:10, leaching 3 times, natural carotene OD value of 0.638. (3) using cellulose enzymatic extraction of natural carotene, the extracting agent of anhydrous ethanol, enzyme solution temperature is 50 ℃, pH value of 4.0, enzyme dosage was 0.3%, the enzymatic hydrolysis time of 120 min, natural carotene OD value of 0.672.
